The Pinot Noir grapes were hand harvested on 25th March from our Defiance Vineyard on Felton Road and Domain Road Vineyard on the 8th April 2015. The fruit was destemmed, crushed and held cold for 24 hours, allowing the juice to pick up our signature salmon pink colour from the extra skin contact time. The fruit was then pressed before fermenting, which was stopped to retain just a touch of residual sugar to balance the wines natural acidity.
