Hand-picked, this wine was entirely whole Bunch fermented in a Concrete Egg tank which was occasionally pumped over or plunged. After a total maceration time of 8 weeks, the wine was basket pressed, blended and returned to concrete and French oak barriques for maturation (total new oak of 20%). A natural malolactic fermentation completed the following spring. After 12 months maturation, the components were blended and bottled without fining or filtration.
