The Maude Pinot Noir is a masterful blend of fruit from five distinct sub-regions within Central Otago, each adding its own nuance to this exceptional wine. Crafted using traditional methods, including open-topped fermentation, hand plunging, and indigenous yeasts, this Pinot Noir reflects an artisanal approach to winemaking. With a portion of whole bunches in each fermenter for added complexity, extended skin contact for tannin development, and maturation in French oak barriques for 10 months, this wine is a true representation of Central Otago’s terroir. Aromatically captivating, this Pinot Noir opens with layers of blackcurrant, bramble, and dark cherry interwoven with notes of plum, smoke, violets, and wild thyme. On the palate, it reveals a savoury and structured profile, where dark fruit flavours are beautifully balanced with velvety tannins and subtle oak nuances.
