Overview:
Aragonesas Coto de Hayas Fagus is a distinguished wine made from 100% Garnacha (Grenache), sourced from vines over 40-50 years old, with a very low yield of about two pounds per vine. This wine is crafted using a traditional winemaking method, where fermentation takes place at 28ºC with temperature control, followed by a two-week maceration with skin contact. The wine undergoes malolactic fermentation in French oak barrels, where it is aged for 8-9 months, imparting rich, elegant qualities to the final product.
Tasting Notes:
The wine exhibits an intense cherry-red colour with ruby hues, offering a clean and brilliant appearance. On the nose, it reveals a powerful yet elegant aroma of very mature red fruits, complemented by hints of spice and vanilla from the aging process in French oak casks. On the palate, it is perfectly balanced, with a generous, harmonious structure. The wine is filled with rich red fruit flavours and soft, sweet tannins derived from the oak barrels, resulting in a sumptuous and smooth mouthfeel. Coto de Hayas Fagus pairs well with a variety of dishes, particularly grilled meats, roast lamb, or dishes featuring earthy mushrooms, complementing the wine’s ripe fruit and subtle oak characteristics.
