Overview:

The Billecart-Salmon 2009 Cuvée Elisabeth Salmon Brut Rosé is a tribute to Elisabeth Salmon, the co-founder of the Champagne house. This exceptional rosé is the product of over a decade of aging, showcasing the finest terroirs of Pinot Noir and Chardonnay. The blend consists of 55% Pinot Noir and 45% Chardonnay, with less than 10% of the Pinot Noir vinified as a red wine sourced from the “Valofroy” vineyard, located on the slopes of Mareuil-sur-Aÿ. This vintage offers a harmonious balance of richness and elegance, making it a remarkable expression of rosé Champagne.

Tasting Notes:

The Cuvée Elisabeth Salmon Brut Rosé entices with a complex bouquet. The aroma presents a refreshing yet sultry combination of citrus peel and rich fruit preserves such as blackberry and redcurrant jelly. It is further enriched by notes of blackcurrants, blueberries, and the refined maturity of sweet spices and candied violets. This aromatic complexity evolves as it lingers on the nose.

On the palate, the champagne reveals a distinctive mouthfeel, perfectly balancing strength with delicacy. Flavors of panettone, candied clementines, and ginger unfold, while a chalky edge offers an elegant texture. The finish is persistent, with lingering citron zest that adds brightness to the overall experience. This vintage rosé is a true class act and pairs beautifully with sophisticated dishes that complement its complexity. It would be an excellent choice alongside seafood such as lobster or scallops, as well as fine pâté or creamy cheeses. The delicate yet expressive nature of this champagne makes it a standout when paired with culinary delights that enhance its natural elegance.
